Sean’s journey into coffee wasn’t a straight path. After graduating from the University of Texas with a degree in film, he found himself drawn to the world of coffee, spending time exploring Austin’s growing coffee scene. It wasn’t until a trip to Seattle that his interest turned into something more serious. Inspired by the city’s deep coffee culture, he returned home with a vision: to create a coffee shop that prioritized both quality and connection.
His first real step into the industry was working at Caffé Medici, one of Austin’s early pioneers in high-end espresso. That experience solidified his dream, and in 2010, the first Houndstooth Coffee opened in Austin. Paul initially joined as a barista, intending to help his brother launch the business. But the café’s energy, the community it built, and the craft behind every drink pulled him in completely. Now, Paul manages the Austin locations, while Sean oversees the company’s broader growth.
Unlike many growing coffee brands, Houndstooth Coffee has never taken outside funding. Every decision, from opening new locations to refining the coffee program, has been made with deliberate care, ensuring that the essence of what they built—a place where coffee and people form lasting patterns remains intact.
